Known as the work horse in many kitchens, the gyuto is a Japanese style chef knife. The gyuto features a forged o1 high carbon steel blade. Dan forges each blade, and he leaves hammer marks from the forging process visible as a defining design detail. No two blades are ever exactly the same. He then adds a handle that is carefully designed to complement the blade, creating a balanced and timeless aesthetic. This gyuto has copper, black micarta and turquoise composite spacers and a copper bolster that beautifully accent this leopard wood handle. The wood is stabilized with a heat treat resin that hardens and strengthens the wood. The handle is finished with a solid copper pin. Knife Care

Blade material is a high carbon steel and will rust if not properly taken care of. When the tool is not in use for an extended period of time it should be protected by applying a light film of oil. The handle should also be rubbed occasionally with linseed oil to maintain its protective coating. Do not place knife in the dishwasher, and avoid washing in excessively hot water, and use minimal soap to avoid stripping oils from the handle.
