The cheese knives in this set have forged o1 high carbon steel blades, with copper bolsters, stabilized black walnut spacers, and antler handles. The original knife shape is great for hard cheeses, and the spreader is great for soft cheeses and spreads, so they compliment each other beautifully.

– o1 tool steel is a high carbon steel that performs beautifully, has excellent edge retention and will develop an appealing patina over time. Must be hand washed and dried promptly. Knife Care

Blade material is a high carbon steel and will rust if not properly taken care of. When the tool is not in use for an extended period of time it should be protected by applying a light film of oil. The handle should also be rubbed occasionally with linseed oil to maintain its protective coating. Do not place knife in the dishwasher, and avoid washing in excessively hot water, and use minimal soap to avoid stripping oils from the handle.
